These recipes are filling, comforting, nutritious and delicious, every last one of them! They’re quick and easy to make, look wonderful and are the answer to your weeknight meal questions. So, without further ado let’s jump into my list of 10 Clean Eating Hearty Healthy Recipes!
I’m heading into Autumn, you might be heading into spring (lucky you, can we swap places? The wind is currently howling outside and it’s pouring with rain), but either way this list of awesome clean eating recipes will suit the season.
In fact, they suit any and all seasons.

1. BAKED CHICKEN BARLEY KALE STEW
As far as comforting stews go, it doesn’t get any more wonderful tasting (thanks to the turmeric, paprika and fresh rosemary) and completely satisfying than this chicken barley kale stew! The chicken is tender and juicy, the barley has a nutty-grainy taste to it and it’s really GOOD FOR YOU. Loving all of the above!

2. NUTRITIOUS RED PEPPER CARROT SOUP
One of my all time favourite soups…The flavour is phenomenal, is there anything better than roasted red peppers? I think not. And when they’re blitzed to creamy perfection with carrots, sweet potato, red onion, vegetable broth and spices, it’s HEAVENLY. You gotta try it!

3. MUSTARD CHICKEN QUINOA RED PEPPER CASSEROLE
This recipe is a MUST TRY. Do not pass by this one, it’s wonderfully tasty, creamy from the coconut milk, the chicken is incredibly tender, the red pepper lends it’s glorious flavour to every bite, the quinoa is poppy and the broccoli is perfectly cooked and a tiny bit crunchy. This is THE BEST healthy chicken casserole recipe. Try it, very very soon.

4. ASPARAGUS SUN DRIED TOMATO HUMMUS WRAPS
This one is a short-cut recipe. I did not make the hummus, I certainly did not make the wraps or dry my own sun-dried tomatoes. All I did was roast the lovely fresh, snappy asparagus to perfection, assemble the wraps, and serve them to hungry people, soon to be very happy people with full tummies. You can do this too, it’s so ok, and it’s so YUM.

5. MUSHROOM BROCCOLI & GINGER STIR FRY
Veggie lovers, vegetarians and vegans, and also you meat eaters, so basically EVERYONE – will LOVE this dish! It’s a bit of a throw back, one of my earlier recipes, but it’s soooo tasty, a little bit saucy and full of texture from the broccoli and rice, and it’s on the table in 30 minutes. Nuff said.

6. CARAMELISED PLUM OATMEAL BOWLS
The perfect quick and easy breakfast for chilly mornings! These bowls take minutes to throw together, and you don’t have to stick to caramelised plums, you can use any stone fruit you can think of, bananas work amazingly well, apples, pears, pineapple, even berries! Oh, the flavour and aroma of caramelised fruit! To die for. This is how you want to wake up.

7. OVEN BAKDED HEALTHY VEGAN FALAFEL
In just 30 minutes you can have baked chickpea and fresh herb falafel balls or burgers on your very own table! These guys are EASY to make, trust me, they are no-fail. And ME OH MY do they taste good, and professional, and they’re 100% amazingly good for you. Serve them with salad, in a wrap or burger bun and top them with your favourite healthy toppings.

8. CLEAN EATING CARROT TURMERIC GINGER SOUP
This soup is as amazing as it sounds! It’s a crowd pleaser, there aren’t too many people who don’t love these flavours together, and rightly so! It’s done in just 35 minutes and a splash of coconut milk on top gives it a little creaminess, imagine this soup with a nice hunk of healthy bread…Glorious!

9. SMASHED CHICKPEA AVOCADO CHICKEN SALAD
Avocado, chickpeas, tender chicken, boiled eggs, spices and feta cheese…Incredibly versatile, you can enjoy this salad on its own with some salad greens or have it in a wrap or brown-bread sandwich or a fresh bagel or bun. It’s yummy and very healthy any which way.
