Healthy holiday banana muffins!
I can’t remember the last time I was this excited about a muffin, I think it was….nope never been this excited about a muffin. I can’t begin to tell you how amazingly these banana muffins turned out!! Like……WOOOOOW. They are SO GOOD!
I wasn’t actually planning on sharing a muffin recipe this week – being the week before Christmas and all I was going to share some cookies or something equally delicious and Christmassy. But I had some really ripe bananas that needed to be used up so I threw these little guys together this morning and OH my word. I just couldn’t not share them with you!
The banana pecan combo is just amazing – the nutty flavour goes all the way through the muffins and the cinnamon just brings it all together to equal muffin HEAVEN. Did I mention they are SUGAR FREE? Because they so totally are. Muffin heaven and totally healthy…Christmas came early this year.
I am going to be making these many many times for years to come I just know it. And I’m sure you will too once you try them. These Banana Pecan & Cinnamon Muffins are really very easy to make, they’d be great to make with your kids. Store them in the fridge if the weather is hot like it is here, and have some for breakfast the next day!
Who doesn’t love a good healthy breakfast muffin? And these definitely fit into that category. Your guests will love you for these and be so impressed with your baking skills especially when you tell them they’re sugar free and full of goodness.
A perfect tea time snack too, a bit of light relief from all the cakes and puddings that float around at this time of the year. - 4 large very ripe bananas
- 1/3 cup butter
- 1 tbsp honey
- 2 eggs beaten
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp vanilla essence
- pinch of salt
- 1 1/2 cups flour
- 3/4 cup pecan nuts

Set oven to 180°C and grease a muffin tin.

Mash bananas in a large bowl with a fork until fairly smooth.

Melt butter and add to the bananas, stirring in with a metal spoon. Then stir in honey, lightly beaten eggs, baking soda, cinnamon, vanilla essence and salt.

Add flour and fold in.

Chop the pecan nuts into little pieces, keeping aside 12 whole pecans to put on top of the muffins with a sprinkle of cinnamon.

Bake for about 35 minutes. Let muffins cool before you turn them out.
