We are experiencing a cold snap at the moment. The last few days have been unreasonably chilly for our slice of the globe, but I have to admit, we are LOVING IT.
Last year we really didn’t have a winter at all, the whole year was warm, I don’t think I wore a thick jersey or a pair of boots even once.
Which might sound like a dream to some of you who live in properly cold climates (I hear you!), but, there’s something to be said for having your year broken up into seasons.
Variety is the spice of life, as they say!
And I’m taking full advantage of the cold by making all the warm and cozy (sometimes old-fashioned and nostalgic – winter does that to me) dishes I can wrap my mind around.
Brace yourself for all the winter-warmers coming at you!

This recipe can be made in an oven-safe crock pot, which is how I make it – this method takes about 2 hours. Or in a slow cooker – this method takes about 4 hours, depending whether you cook on high or low.

Crock Pot Beef And Lentil Stew is made with:
- Beef shin (with bones), or stewing beef
- Onion, carrots, potatoes, peas and mushrooms (an unusual addition, but SO SO good!)
- Canned tomatoes, beef broth
- Lentils, pre-soaked (see recipe)
- Gluten-free flour, Himalayan pink salt and ground black pepper
Here’s how to make Crock Pot Beef And Lentil Stew:
- Heat oil in oven-safe crock pot, toss beef in flour and seasoning and brown in hot oil for about 15 minutes
- Once beef is browned, stir in veggies, canned tomato, broth and 1 cup hot water, cover and cook for 1 hour. Stir in soaked, drained and rinsed lentils and cook for another hour
- Stir in peas and allow to sit for 5 minutes
- Serve with brown rice or your favourite healthy bread, or as is!
Comfortably serves 6 fully-grown, rumbling-tummy adults in the dead of winter.
So I would imagine if you’re feeding a family with younger kids, you can count on this stew going a lot further.
Especially if you serve it with aforementioned brown rice or healthy bread.
Not to worry if you have left-overs, this stew freezes brilliantly, or keeps in the fridge in an airtight container for up to 5 days.
My Crock Pot Beef And Lentil Stew totally reminds me of an absolutely delicious beef goulash that I had while visiting family in Europe a long, long time ago (I was 13!). But I can remember the rich flavours like it was yesterday.
And now I have a similar dish that I can make over and over again, and I plan to.

- 4 tbsp olive oil
- 2 tbsp gluten-free flour , or plain flour
- Himalayan pink salt
- Ground black pepper
- 1 kg beef shin or stewing beef (with bones) , sliced into cubes
- 1 onion , finely chopped
- 1 large carrot , peeled and sliced into rounds
- 2 medium potatoes , peeled and diced
- 1 cup button mushrooms , sliced
- 400 g canned chopped tomatoes
- 2 cups beef broth , low sodium
- 1 cup brown lentils , soaked for at least 2 hours (cover with water, add 1 tbsp apple cider vinegar + 1/4 tsp pink salt)
- 1 cup peas , fresh or frozen

Preheat oven to 250°C (482°F).

In a large, oven-safe crock pot, heat the olive oil in the oven for 8 minutes.

In a medium bowl, mix flour, a generous pinch of salt and black pepper together. Toss beef in flour mixture, then carefully toss beef in the hot oil (it should simmer) place back in oven, uncovered, to brown for 15 minutes.

Reduce oven temperature to 180°C (350°F).

Once beef has browned, stir in onion, carrot, potatoes, mushrooms, canned tomato, beef broth and 1 cup hot water to the crock pot. Return to oven, cover and cook for 1 hour.

Stir in drained and rinsed lentils and cook, uncovered, for another 60 – 90 minutes until beef is really tender.

Once the stew is cooked, stir in peas and allow to sit for 5 minutes. Serve with brown rice, or healthy bread, or as is!
You can make this stew in a slow cooker, just brown the beef in a frying pan, place in slow cooker and follow instructions as above, cook on high for 4 – 5 hours.
