I was particularly happy about having this bowl of goodness for breakfast this morning as it’s been a really rainy day today, quite chilly too.  I fear we are heading into winter a little earlier than last year.  But that’s OK, most winter days here are quite lovely.

Since I’m actually looking forward to cozying up for a change, I’ve been thinking about all the delicious winter meals, drinks, and treat recipes I’m going to conjure up over the next few months!  I’m really excited about everything I have in mind to share with you and I can’t wait to get started.

Ingredients
  • 2 plums pitted & sliced
  • 1 tsp honey
  • Sprinkle of ground cinnamon
  • 1 cup rolled oats
  • 1 1/2 cups water
Instructions
  1. Place a large, non stick frying pan on medium heat. Arrange the plum pieces in the frying pan and drizzle over the honey, stir to coat both sides of the plum slices. Fry the plums on both sides until they are browning and tender, and the honey is caramelising. Take them off the heat.
  2. Place the rolled oats in a large microwave-safe bowl with the water, and microwave on high for 3 minutes. The oats should bubble right up at the end of the cooking time and be really creamy.
  3. Spoon the oatmeal into bowls and arrange the caramelised plums on top. Sprinkle with the cinnamon, drizzle with a little more honey if you like, and serve.
Recipe Notes

This is delicious with Greek yoghurt or coconut milk. For more people, just double or triple the recipe.
