Super easy to make dark chocolate, coconut, cashew, almond and raisin bites! These are incredibly yum, packed with protein, complex carbs and healthy fat which makes them an ideal healthy snack or dessert. Try these Easy Chocolate Coconut Cashew Bites very soon!

This recipe stems from throwing a bunch of ingredients together one evening in desperation for something chocolatey and delicious.

Since then I’ve made these little treasures countless times…

Taking just 10 minutes to prep, they don’t feel like a chore at ALL.

Tweaking and taste-testing, adding a little here and a little there until my hubby and I were both EXTREMELY HAPPY with the recipe!

How to make Easy Chocolate Coconut Cashew Bites:

It’s important to use a silicone muffin pan so the chocolate bites pop out easily once frozen. 

I have made these in a metal muffin pan but you need to use a butter knife to loosen the sides – it works, but your chocolate bites won’t look quite so pretty.

If you’re vegan you can omit the butter or ghee and replace it with coconut oil, or add an extra spoon of nut butter – it’s up to you!

I would just say that if you use any of the larger dried fruit that it would be best to chop them into smaller pieces.

It’s such a treat to have one after dinner – they taste so chocolatey and nutty and they’re crunchy and sweet – absolutely yummy.

What’s also cool is that these little guys can live in the fridge or freezer in an airtight container, so they last a good amount of time.

That’s if a crowd of hungry tummies doesn’t get to them before you can store them away!

Just 10 minutes between you and melt in your mouth dark chocolate with oodles of coconut, crunchy nuts and sweet dried fruit. Healthy and nutritious – such little gems!

Ingredients
  • 4 tbsp butter, or ghee , organic
  • 4 tbsp coconut oil , raw and organic
  • 1 1/2 tbsp raw cacao powder
  • 2 1/2 tbsp nut butter of choice
  • 2 1/2 tbsp coconut sugar
  • Pinch Himalayan pink salt
  • 1/2 cup desiccated coconut , unsweetened
  • 1 cup dried fruit , I use mixed raisins, but anything will work!
  • 1/3 cup raw cashews , whole or chopped
  • 1/3 cup raw almonds , whole or chopped
Instructions
  1. Melt butter, coconut oil, cacao, nut butter and coconut sugar together in a medium saucepan. Stir in salt, desiccated coconut, dried fruit, cashews and almonds.

  2. Divide mixture evenly between 12 standard muffin cups (a silicone, pliable muffin pan works like a dream to pop these little guys out once frozen).

  3. Freeze for 15 minutes, or refrigerate for 40 minutes until solid. Pop chocolate bites out and enjoy! Store in an airtight container in the fridge or freezer.

Recipe Notes

You can use any dried fruit and nuts for this recipe, play around with it until you find your favourite combo! (I would recommend chopping fruit like pears or apricots into small pieces)
