Warm & spicy Honey Vanilla Nutmeg Summer Fruit Bake for the weekend!
Now, if the look of this (right up there ^^) gorgeous dish of baked stone fruit, strawberries and pineapple dripping with fruit juices and spice and drizzled with vanilla yoghurt sauce doesn’t make your mouth water, then I don’t know what will!

Fruity puddings are my jam! In fact, fruit in general is normally one of the highlights of my day, as if the name of my blog doesn’t give that away! I’m fruit crazy and totally fine with it.
I would choose a fruity pudding over just about any other option. Except maybe an amAzing brownie with chocolate sauce! When a brownie is good….it’s pretty irresistible. I don’t know about you, but all this talk of puddings is making me hungry!!
Good thing I have an amazingly YUM, quick & easy recipe for you today that will totally appease your sweet tooth and keep you right on the healthy train! When it comes to indulgent puddings this one is right up there as far as flavour goes, but it’s really not unhealthy at all. Sweetened with honey and covered in nutmeg and cinnamon – this Honey Vanilla Nutmeg Summer Fruit Bake is a real winner!!
I love this for a casual weeknight pudding if you have friends over for a kitchen supper, or it’s great to top off a meal with the family on the weekend. I’ll bet leftovers will be hard to come by!! But if you do happen to have a bit left over it’s really amazing on some oatmeal or my Oatmeal Bran Banana Pancakes in the morning. SO GOOD!!

- FOR THE FRUIT BAKE:
- 2 large nectarines sliced
- 3 red plums sliced
- 1 cup strawberries halved
- 1 cup pineapple roughly chopped
- Drizzle of honey
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- FOR THE YOGHURT SAUCE:
- 3 tbsp Greek yoghurt
- 1 tbsp honey
- 1 tsp vanilla essence

TO MAKE THE FRUIT BAKE:

Preheat oven to 175°C.

Arrange all the fruit in a baking dish, drizzle over about a tbsp of honey and sprinkle the cinnamon and nutmeg evenly over the fruit, give it a gentle toss and bake for about 15 minutes until the fruit is tender.

TO MAKE THE YOGHURT SAUCE:

In a bowl mix together all the ingredients, place in a jug to serve alongside the fruit bake, or wait for the fruit to cool slightly and drizzle the sauce over and serve.
