Here’s how easy it is to make HEALTHY Morning Glory Muffins:
- Whisk together fresh fruit, vanilla extract and eggs
- Mix in dry ingredients until well combined
- Divide between 12 muffin liners in a muffin pan
- Bake for 18 – 19 minutes until beautifully golden

Basically 4 simple steps, and you’re done!

Cool on a wire rack, I like to eat these warm. Drizzle with a little warm honey right before serving.

Glorious, soft and fluffy HEALTHY Morning Glory Muffins that are easy to make! Packed with grated carrot, apple, fresh orange and raisins.
- 1 cup carrot , peeled and grated
- 2 cups green apple , peeled and grated
- Juice, pulp and zest of 1 orange
- 1 tsp vanilla extract
- 3 large eggs
- 1 1/2 cups wholewheat flour , or your favourite gluten-free flour
- 1/2 cup old fashioned oats , blended into flour
- 1/2 cup coconut sugar
- 1 tsp baking soda
- 1/2 tsp baking powder
- Pinch Himalayan pink salt
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp ground ginger
- 3/4 cup mixed raisins

Preheat oven to 170°C (338°F). Line a regular size muffin pan with 12 paper liners.

In a large bowl, whisk together carrots, apples, orange juice and zest, vanilla extract and eggs.

Stir in wholewheat flour, oat flour, coconut sugar, baking soda, baking powder, salt, cinnamon, nutmeg, ginger and raisins until well combined.

Divide the mixture equally (about 1 heaped tbsp each) into the muffin liners and bake for 5 minutes, turn oven down to 160°C (320°F) and bake for a further 13 – 14 minutes or until a toothpick inserted into the middle of a muffin comes out mostly clean.

Turn muffins out and allow to cool on a wire rack before drizzling with a little warm honey (optional) before serving. Enjoy!
