orange & strawberry breakfast muffins (sugar free)
The thing about these orange and strawberry muffins is that they are 99.99% good for you.
They are sugar free, they have 3 kinds of honest to goodness healthy fruit in them, and they taste like muffin heaven. I may be a little biased seeing as I created them from scratch just this morning with my own two hands, but I’m pretty sure you’ll agree with me once you try them.
Thinking about creating things from scratch reminds me about my recent cake making escapades where I discovered that I actually could make up a cake recipe out of thin air, bake it and hope for the best…. And sometimes, this time anyway, it turns out really REALLY well. I’m referring to my 2 layer lemon drizzle silk cake with cream cheese icing which was more delicious than I can put into words, and really very easy to make. Tempted to give it a try? The orange zest comes through strongly in these muffins so that they take on a really citrusy flavour which is complimented so well by the sweetness of the dates and every now and then you get a burst of strawberry goodness to wake up the taste buds.
What I love about them is that they are a true breakfast muffin, or morning tea muffin. For the very reason that they are not overly sweet, that they honestly are healthy, and you do feel like you’ve eaten something nourishing and energy boosting.
These muffins would be perfect to have on hand for those mornings when you need to grab breakfast as you rush out the door. A great lunch box addition or perfect as an accompaniment to a weekend family brunch.
I kid you not, I prepared these in 12 minutes flat. And they came out as golden brown, perfectly cooked, steaming breakfast muffin perfection after 30 minutes in the oven.
You can make these with any citrus fruit you like, and you can substitute the strawberries with any berry or stone fruit that takes your fancy, get creative! I want to hear all about your breakfast muffin creations.
- 125 g dried dates chopped
- 1/3 cup butter
- 1 tbsp olive oil
- 1 1/2 cups flour
- 1/2 cup coconut
- 1 cup strawberries chopped
- Juice & rind of 1 large orange
- 1 tsp vanilla essence
- 1 egg
- 1 tsp bicarb

Place chopped dates, strawberries and juice and rind of one orange in a mixing bowl.

Melt butter and stir in olive oil, pour into the date mixture, add bicarb and stir.

Add egg & vanilla essence to date mixture, stir.

Now add flour and coconut and mix until combined.

Spoon into muffin pan and bake at 180°C for 30 mins until a tester comes out clean.

Gran’s crunchies is the same recipe my mum passed on to me. Delic but don’t make them too often as can’t stop once I start.!!! Look forward to more in the future. Lol x
