This is by far my absolute favourite detox salad that I have made to date!!  The variety of flavours and colours go together so well, and the way it’s prepared with everything spiralled and cut up fairly small, you get all the flavours in every mouthful which is just the best!  Yum yum….give me more of this healthy salad any day!

I’ve always been a salad-y person.  I love a good salad.  But I enjoy them more when they’re prepared for me and all I have to do is eat them!  Am I alone here?  Sometimes it just feels like a real mission to get all the veggies out and chop them up just for a little itty bitty salad for one or two people for lunch. 

Which is why I decided to make a HUGE Beetroot Detox Salad so that you can keep it in the fridge for a couple of days and nibble on it whenever the mood strikes.  OR – it’s perfect for a larger gathering as it serves 8 people as a side salad.  Another salad that is really delicious and gorgeous looking is my Pecan Cranberry & Avocado Salad with Orange Dressing, as well as my Roasted Butternut Cous Cous Salad with Pesto Dressing give these a try too!

I particularly love the Honey Mustard Dressing that I made to go with this Beetroot Detox Salad.  It’s not overwhelming at all, but adds a hint of honey, mustard and a touch of lemon and olive oil to each bite which is just enough to bring all the flavours together for salad perfection on a plate.

I would eat this salad for lunch as a main dish, it would be fabulous to take to work, and I would love to share it with family and friends as a side dish – it will go with just about anything!

Our favourite detox salad that's quick and easy to make, with a delicious olive oil, apple cider vinegar and honey dressing!

Ingredients
  • FOR THE SALAD:
  • 2 1/2 cups spiraled or grated fresh beetroot
  • 2 cups baby salad spinach
  • 1 cup sliced red cabbage
  • 1 cup spiraled or grated carrot
  • 3 medium radishes chopped
  • 1/2 cup sliced celery
  • 1 cup almonds
  • 1/2 cup sunflower seeds
  • 1/2 cup coconut shavings
  • FOR THE HONEY MUSTARD DRESSING:
  • 3 tbsp olive oil
  • 1 tsp apple cider vinegar
  • 3 tsp honey
  • 1 tsp lemon juice
  • 1 tsp wholegrain mustard
  • Salt & pepper
Instructions
  1. Wash all fresh produce well. Slice, spiral or grate all produce and place in a large salad bowl with the almonds, sunflower seeds and coconut shavings.
  2. Place all dressing ingredients in a small bowl and mix well until it comes together.
  3. Pour dressing over salad and toss.
