This Simple Creamy Peanut Ginger Dressing goes on just about anything! Not only does Simple Creamy Peanut Ginger Dressing go on just about anything, it takes that dish to a whole ‘nother LEVEL. Oh.Yes.It.Does.
I’m talking:
- Salads of all shapes, colours and descriptions
- Healthy pasta dishes
- Couscous
- Rice dishes
- Rice noodles – perhaps with chicken?! – YUUUMMM (is there anything better than peanut butter chicken with rice noodles? I think not)
- Zucchini noodles (AKA Zoodles)

That’s a LOT of scope for how and when to eat this incredibly yummy sauce/dressing. It’s a Drauce, or is it a Sressing! Neither of those are working for me, we’ll have to go with the long sauce/dressing version.
I’m having a peanut butter week of note! For some reason, I just can’t get enough. It may be because I’ve had a very meat-free week…so I’m craving the nut protein. Or I’ve just come fully to my senses and realised that peanut butter and me are inseparable. I may as well accept it – we’ve grown close over the last few days, and no one can tear us apart.
Is it a sauce? Or is it a dressing?
It’s definitely an either-or situation. I specifically made it with coconut milk instead of water so that it would be thicker and creamier and a little more saucy in nature than it’s predecessor which you can find along with this recipe —> Asian Carrot Salad With Ginger Peanut Dressing.
And this is why it’s so versatile, because not only is it packed with gingery, garlicky, pea-nutty, turmeric-y flavours, but it’s SOOO creamy dreamy delicious!!
Just the right pouring consistency to fall into the Saucy-Dressing category and be acceptable as either a sauce or a dressing depending on the food occasion.
This Simple Creamy Peanut Ginger Dressing is absolutely perfect for keeping in the fridge for the week so that you have a healthy condiment full of flavour to add to any meal at a moments notice. It takes just 5 minutes to throw together and then it’s got your back all week long…
If used as a dressing, I’d say it will serve up to 10 people. If used as a sauce (depending on how saucy you like your food!) it should serve up to 6.
It’s equally as delicious on hot dishes as it is on cold salads, and you can play around with the honey element to make it as sweet or savoury as you like. I’m a fan of the sweet and savoury combo…so if you like it less sweet, adjust the recipe to suit you!
This dressing/sauce makes me HAPPY. I’m feeling good just writing about it! And now I’m feeling like I need to head to the kitchen and throw some Simple Creamy Peanut Ginger Dressing over some delicious healthy food in order to keep my tummy full and satisfied.

This easy and healthy dressing goes with just about anything! Salads, pasta, rice, couscous, chicken, the list goes on!
- 3 tbsp peanut butter salt and sugar free
- 1/2 tbsp apple cider vinegar
- 1/2 tbsp olive oil
- 1/4 clove garlic minced
- 1 tsp fresh ginger grated
- 1 - 1 1/2 tbsp honey
- 1/8 tsp ground turmeric
- Pinch of salt and black pepper
- 1/2 cup coconut milk

Place all the ingredients in a blender and blend until very smooth and creamy.

Serve with salads, pasta dishes, couscous, rice dishes, or rice noodle dishes.
