Super Food Chocolate Orange Pecan Bark

This chocolate bark is a ridiculously yummy and healthy dessert or snack. It is made with all the best ingredients, in my opinion…Peanut butter, coconut oil, cocoa powder, desiccated coconut, honey, almonds, pecans, orange zest, sesame seeds, pumpkin seeds, vanilla essence and sea salt.

You know after dinner when you get that feeling that you need something sweet and delicious, but you don’t want anything too unhealthy, or in fact anything that’s unhealthy at all? Because you just worked out and eating something unhealthy now would feel like a step in the wrong direction? Who wants to be an after dinner treat backslider anyway? Not me (sometimes me), but usually on weekdays, not me.

Are the ingredients of this bark not THE VERY BEST THINGS IN LIFE all rolled into one delicious, healthy snack?
Um, I should probably confess something. I made the fatal mistake of not checking that my baking sheet fit in the freezer before pouring my chocolate mixture into the pan, and then realised that it did in fact NOT FIT in the freezer. Oops. Which led to pouring the mixture back into the saucepan escapades (I’m sure you can imagine the fun I had!) and then re-pouring the mixture into another (smaller) pan. Phewf. All’s well that ends well.
So, moral of the story is, don’t be like me – check that your baking sheet fits in your freezer BEFORE you start making the chocolate bark.
If you’re lucky enough to have a nice large freezer, go ahead and use a standard baking sheet, which will make your bark thinner than mine. Or if you like the look of the chunky version, give a medium sheet pan a try!

This bark takes just 12 minutes to prepare, it needs 1 hour in the freezer before you break it into pieces. Then it gets stored in an airtight container or packet in the freezer. Super quick and easy!

This chocolate bark is a very yummy dessert or snack. All healthy ingredients and so easy to make!
- 1 1/4 cup peanut butter sugar and salt free
- 1 3/4 cups coconut oil
- 1/2 cup cocoa powder unsweetened
- 1 cup desiccated coconut
- 1/2 cup honey
- 3/4 cup almonds
- 3/4 cup pecans
- 2 tsp orange zest
- 1/8 cup sesame seeds
- 1/4 cup pumpkin seeds
- 2 tsp vanilla essence
- 1/2 tsp sea salt

Line a baking sheet with wax proof paper.

In a medium saucepan, melt the peanut butter and coconut oil until smooth, stirring occasionally.

Stir in the cocoa powder, desiccated coconut, honey, almonds, pecans, orange zest, sesame seeds, pumpkin seeds, vanilla essence and sea salt until evenly coated.

Pour the mixture onto the baking sheet lined with wax proof paper and spread out evenly.

Place the baking sheet in the freezer for 1 hour. Break into pieces and store in an airtight container or plastic bag in the freezer.
If you like, keep some nuts and seeds aside to scatter on to the chocolate mixture once you have poured it into the sheet pan. This makes the bark a bit prettier.
