Spicy Black Bean Tofu Tacos

They’re also unbelievably quick and easy to make, making them a fantastic mid-week dinner for when you can’t be bothered to spend too long in the kitchen.
Preparing the tofu:
The secret to any good tofu recipe is to prepare the tofu ahead of time. While many recipes involving tofu will remind you that the tofu needs pressing before you start, it’s always a good idea to have it at the forefront of your mind.
Without pressing, the excess water in the tofu will make it difficult for the protein to soak up all the yummy flavours you’re preparing it with. It will also be harder to cook and won’t come together as nicely on the plate.
To press your tofu, you’ll ideally want to use a tofu press (like this) to effortlessly squeeze out any excess liquid and create a delicious blank-slate that’s ready to cook and enjoy.
If you don’t have a tofu press, you can remove the liquid by placing your tofu between two chopping boards and topping it with heavy items (for example, weighty books or cans).
With a tofu press, preparing your tofu for a vast range of healthy meals takes just 15 minutes. Without one, you’ll want to leave your tofu pressing for 20 minutes or longer until the tofu is no longer draining liquid.
Preparing the ingredients:
As with any dish, it’s always easier to prepare ingredients before you start cooking. This could be as simple as getting everything out and keeping a set of scales to the side of your food preparation area. Or, if you’re really organised, you could pre-weigh all your ingredients before you start making this dish.
Spicy Black Bean Tofu Tacos are brilliant because you can use almost anything in them!
A bowl of grated cheddar cheese served with this dish is delicious (or, if you want the full vegan experience, go for a dairy-free cheese), some shredded lettuce, lime wedges, cilantro, avocado, sautéed red peppers and onions.
It’s lovely to put all the extras for the tacos out on the table so everyone can help themselves.

This healthy and delicious Black Bean Tofu Tacos recipe is so good that even the most diehard carnivore won’t want to miss out!
- 14 oz extra-firm tofu , pressed and drained
- 1 1/2 tsp chilli powder
- 1/2 tsp dried oregano
- 1/2 tsp cumin
- 1/2 tsp coriander
- 2 tsp chipotle powder
- 1/2 tsp sea salt
- 1/2 tsp freshly ground black pepper
- 2 tbsp extra-virgin olive oil , divided
- 3 cloves garlic , finely chopped or minced
- 1 small onion , finely chopped
- 1 can diced tomatoes with green chillies
- 1 can black beans , drained and rinsed
- 1/4 cup chopped cilantro , (coriander)
- 8 – 10 tortillas (corn or flour), warmed
- SERVE WITH SMALL BOWLS OF:
- Cheddar cheese (or vegan alternative), shredded
- Lettuce , shredded
- Green bell pepper , chopped
- Sour cream
- Lime wedges
- Scallion , chopped
- Avocado wedges
- Cilantro , (coriander)

Cut tofu lengthwise into six slices. Press using a tofu press or DIY method until no more liquid remains.

While tofu is pressing, combine chilli powder, cumin, coriander, oregano, chipotle powder, salt, and pepper in a small bowl.

Once tofu is completely drained, season slices with half the spice mixture.

Place 1 tbsp oil in a nonstick skillet over medium-high heat.Add tofu to the skillet and sear well on all sides. Once tofu is cooked, transfer it to a plate or bowl and set aside.

Add remaining oil to skillet to warm, then add onion and reduce heat to medium.Cook onions for 8-10 minutes or until they are soft and translucent.Once onions have softened, add remaining spice mixture to the pan along with garlic and canned tomatoes.

Bring onion, garlic, and tomato mixture to a boil, then stir in black beans and tofu. Heat everything through, stirring gently to combine, then add cilantro. Taste the dish and add more salt and pepper as desired.

Serve with warmed tortillas and small bowls of your favourite sides.
